High Protein Banana Bread... this is it!

As I become more conscious of my food intake, I am making adjustments to recipes, particularly those of my favorite foods, like banana bread.

I love banana bread. This banana bread is protein-rich and blood sugar-balancing. And it is so good!

The ingredients are:

oat flour, almond flour, protein powder, coconut sugar, baking powder, baking soda, cinnamon powder, eggs, Greek yogurt, vanilla extract, bananas, and walnuts or chocolate chips, or raisins.

Preheat the oven to 350 degrees Fahrenheit.
Line the pan with parchment paper.

In a large mixing bowl, combine the dry ingredients:

1 cup old-fashioned oats.

Put them in a blender and blend until fine.

3/4 cup almond flour

1/2 cup protein powder

1/3 coconut sugar

1 teaspoon baking powder and 1 teaspoon baking soda

and 1/2 teaspoon cinnamon powder.

Mix well until well combined. Then set aside.

In another mixing bowl...

Beat 3 eggs.

Add 1/2 cup Greek yogurt and 1 teaspoon vanilla extract.

Mash very well 2 or 3 overripe bananas, then add to the egg & yogurt.

Whisk the wet ingredients together until foamy, about 2 minutes.

Pour the wet ingredients into the dry ingredients

and mix just enough to combine well.

Pour the batter into the prepared pan.

If desired, top with chocolate chip, or raisins, or chopped walnuts.

Then bake the banana bread in preheated 350 degrees Fahrenheit oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out mostly dry.

It smells so good!

Let it rest for about 5 to 10 minutes, then slice!

A thick slice of this banana bread (cut 8)

is the perfect banana bread for me.
